The Tondre Grapefield is located in the heart of the Santa Lucia Highlands located on the west side of the Salinas Valley in Monterey County. This vintage was harvested from 24 year old Pommard clone vines. 2019 was an incredible vintage, remaining steady lower than average temperatures during ripening.
4 day cold soak. Indigenous yeast fermentation. 7 day primary fermentation with a 5 day extended maceration. Gently pressed into neutral French puncheon. Malolactic fermentation in barrel, 17 month ageing.
