Lilo Vineyard is located at a 1000 ft elevation on a south facing steep hillside of the Santa Cruz Mountains. This 4.5 acre vineyard of Pinot Noir is grown on sandstone, schist, and shale soils. It also shares a view of the Monterey Bay and in turn a cool pacific ocean influenced climate.
~30% whole cluster, 5-6 day cold soak with small sulfur addition. Indigenous yeast fermentation, no additions made. 9 day primary fermentation, 8 day maceration. Gently pressed into neutral barrels and 20% new french oak barrel. Malolactic fermentation in barrel, 14 month ageing. Bottled unfined, unfiltered.
