Fermentation/Aging: Hand-harvested and spread out whole cluster onto ventilated racks. After two weeks of drying out, there was sufficient concentration of both flavor and sugar. Grapes were then pressed whole cluster and put to a stainless steel tank for a long and cool native yeast fermentation. 7 months in Stainless steel tank.
