Fermentation / Aging:Whole cluster pressed and native yeast fermentation, with 50% going to concrete egg and 50% to French oak barrels. Once Primary Fermentation was completed, the concrete egg was racked to 3 neutral French oak barrels for aging. After 18 months the wine was racked to stainless steel tank for 3 months prior to bottling.
